Bao Down came about from two friends collaborating, the team consists of myself, Tristan Chiu & and my childhood friend, Chef and co-owner Eric Tran. The concept came about when Eric and I happen to both be home for the holidays to surprise our families, and after 3 years apart we had a chance to catch up.  Before parting ways and heading back home to Nashville for a business meeting, and Eric on his way to cook in Shanghai; I looked over at Eric and said “So... Do you want to start a Bao Food Truck?  It’s something Nashville’s ready for!”  As you can see he agreed and that’s how Bao Down came about...

We both grew up with a passion for exceptional food; I myself grew up in an Asian household where I would watch my mom prepare authentic 3-course meals for dinner every night promptly at 6:30pm. Watching her prepare Bao’s for our family as a snack is something I hold close to my heart.  Eric’s adventures started much in the same way, as he has a strong passion for food and has had the opportunity to be a part of some amazing teams while living in Chicago, New York, and brief stints in China and Vietnam. A few years ago I had the opportunity to transplant here to Music City to follow my career in Fashion, while Eric followed his passion for cooking in New York.

There are many goals for the Bao Down team, Eric's passion is to create traditional flavors from local sustainable products, while applying healthy ways of preparation; is the backbone of our philosophy.  We believe true authentic Asian flavors and the Bao culture is something fresh and exciting that we're bring here to Music City!
